Need another reason to love Thanksgiving? The leftovers!!!
The only thing I enjoy more than three day spent prepping and cooking a massive meal for friends and family, are the mounds of leftovers in the fridge.
Sure, you can heat up a plate of turkey, potatoes, stuffing and green beans but I prefer making the classic post-Thanksgiving sandwich. I bet most of you have your own version, here’s mine….
Start with a couple of slices of sturdy Jewish rye bread (DO NOT TOAST!); slather mayo and place lettuce on one or both sides; place several slices of turkey; pour some gravy on top; spread a layer of mashed potatoes or yams; add a layer of cranberry relish; smoosh some stuffing on top; drizzle with sweet potato/carrot puree (this is a top secret recipe).
Voila! You’re ready to watch some football!
